4 questions with The Ribcage

Tell me about your business? What items/services do you sell?

We are The Ribcage. We are a family-friendly bbq restaurant. We pride ourselves hand-trimmed meat that are smoked daily. Our rubs, sauces, and side are made fresh in-house everyday. Our most popular items are our brisket, Mac and cheese, eggrolls, and Nachos. We have a standard menu and a specials menu that changes daily. The specials menu has some off-wall sandwiches using our smoked meats and other fresh ingredients. We also have an extensive bourbon list for the bourbon aficionado. If bourbons not your thing we have a full bar including rotating tap.

    What inspired you to start your business?

    My husband and Kevin Jolley started a The Ribcage food truck in 2016. It was always our plan to create a brick and mortar store. When the building became available we purchased it. It took us a couple years to commit to open a full restaurant.

      What is your favorite part about attending festivals/ events?

      My favorite part about the fall festival is seeing all the kids enjoying the activities; my daughter included. I enjoy getting a corn dog and watching the fireworks display.

        What is your favorite fair food or carnival ride?

        My favorite fair food is hands down a corn dog. I can’t go to fair with getting one or maybe two.
